Qualifications

Education and Experience: Education equivalent to graduation from a standard high school and experience equivalent of two years of work in the food service industry including lead cook and/or kitchen management experience.

Substitution of Education for Experience: Additional coursework at an accredited college or university in dietetics, food service systems administration, or other acceptable field may be substituted for the required experience, on a year-for-year basis.

Necessary Special Qualifications:

  1. Willing to obtain Manager level food safety certification with in 90 days of hire.
  2. A valid motor vehicle operator's license may be required for employment in some positions.
  3. Willing to obtain the Tennessee Alcoholic Beverage Commission(TABC)Server Permit within 61 days of hire date.
Overview

The BOH (Back of House) TSP Assistant Kitchen Manager plays a crucial role in supporting the TSP Kitchen Manager in the overall operation of the kitchen. This classification involves overseeing kitchen staff, ensuring food quality and consistency, managing inventory supplies, and maintaining health and safety standards in the kitchen. The TSP Assistant Kitchen Manager will help create a positive and efficient work environment while delivering exceptional culinary experiences to guests. This classification differs from the TSP Kitchen Manager in that the later services as a full manager over back-of-house operations at a state park restaurant.

Responsibilities

  1. Assist in managing daily kitchen operations, including food preparation, cooking, and presentation to ensure high-quality dishes are served.
  2. Supervise and train kitchen staff, including cooks and kitchen aides, to uphold food safety and quality standards.
  3. Helps in menu planning and development, ensuring that dishes are executed according to established recipes and plating standards. Collaborates with the Kitchen Manager in developing seasonal menus and special promotions.
  4. Maintains inventory and ordering of kitchen supplies, including food, equipment, and cleaning supplies, ensuring adequate stock levels. Monitors food costs and waste, helping to implement measures to maximize efficiency and minimize waste.
  5. Ensures compliance with health and safety regulations, conducting regular checks on food storage, sanitation, and cleanliness.
  6. Assists with staff scheduling and performance evaluations to maintain an effective and cohesive kitchen team.
  7. Participates in maintaining kitchen equipment, ensuring proper functioning, and addressing any maintenance needs promptly.
  8. Contributes to a positive team atmosphere by fostering open communication and encouraging collaboration among kitchen staff.
  9. Assumes Kitchen Manager duties in their absence, will be opening and/or closing Manager On duty (MOD) regularly.

TN Driver Standards

State of Tennessee positions that may involve driving responsibilities require candidates to meet the following minimum driver qualifications:
  • A valid driver's license
  • For the past five years, the candidate's driver record must not have record of the following violations: driving under the influence (DUI), reckless driving, license suspension for moving violations, more than 4 moving violations.
