Job Summary:
The Sushi Cook will be responsible for preparing sushi dishes in a timely and efficient manner. They will be expected to use fresh ingredients and raw fish to create a variety of sushi dishes including maki, nigiri, and sashimi. The Sushi Cook/Chef will be required to follow established recipes and plating procedures in order to maintain consistency and quality. Additionally, they must adhere to strict food preparation and hygiene standards at all times.

Responsibilities:
- Prepare sushi dishes including maki, nigiri, and sashimi
- Follow established recipes and plating procedures to maintain consistency and quality
- Ensure adherence to strict food preparation and hygiene standards at all times
- Use basic knife skills and understand basic kitchen equipment in a safe manner
- Work at a fast pace in a high-volume, fast-paced, team-oriented, and professional sushi bar
- Maintain an organized workstation for food production
- Communicate concerns and suggestions openly and honestly
- Continuously learn and improve skills through an openness and willingness to learn
- Other duties as assigned by management

Qualifications:
- High school diploma or equivalent
- Minimum of 3 years of experience in sushi preparation, preferably in a high-volume, fast-paced setting
- Ability to work independently and in a team-oriented environment
- Basic knife skills and understanding of basic kitchen equipment
- Ability to work at a fast pace with attention to safety
- Knowledge of a la carte food preparation and ability to set up a station with limited supervision
- Excellent communication skills and ability to take constructive feedback in a non-defensive manner
- Can-do attitude, especially when under pressure
- Ability to stand for extended periods of time
- Ability to lift up to 35 pounds
