Clyde's Restaurant Group is seeking a skilled and driven Sushi Chef to lead the celebrated sushi program at The Hamilton Restaurant - a high-energy DC landmark. WHAT WE LOOK FOR IN A SUSHI CHEF
  • 2-3 years' experience as a Sushi Chef in a high-volume, fast-paced Japanese kitchen
  • Mastery of sushi preparation, knife skills, fish handling, and plating with attention to detail
  • Strong leadership skills to train, motivate, and develop a cohesive sushi team
  • Passion for delivering consistent, high-quality dishes that delight guests
  • Experience creating staff schedules and managing labor budgets to optimize team performance and costs
  • Commitment to maintaining cleanliness, hygiene, and food safety standards
  • Ability to manage time effectively and work well under pressure
  • Balanced leadership style that combines accountability with team support and growth
  • Clear communication skills for setting expectations and providing feedback
WHAT YOU WILL DO AS A SUSHI CHEF
  • Collaborate closely with The Hamilton's Executive Chef to align the sushi program with overall kitchen operations, culinary standards, and service goals
  • Lead and support the sushi team through all phases of prep, production, and service, ensuring quality and consistency in every dish
  • Oversee the proper handling, storage, and rotation of fish and ingredients to maintain peak freshness and food safety
  • Assign and manage daily prep tasks, upholding exacting standards for portioning, presentation, and technique
  • Demonstrate and reinforce both traditional and modern sushi preparation methods through hands-on leadership and coaching
  • Expedite orders from the sushi bar with a sharp eye for accuracy, timing, and visual appeal
  • Create and manage team schedules aligned with business volume and labor cost targets
  • Conduct regular walkthroughs to ensure the sushi bar and prep areas meet the highest standards of cleanliness, organization, and health code compliance
