ESSENTIAL FUNCTIONS - Come to work at your scheduled time, ready to work, and in clean/approved uniform.
- During times when Surf Shack is open, take over cooking for AM shift, then prep for dinner at 4pm when Courtyard Bar is closed or during slow business times.
- The rest of the year when Surf Shack is closed; first make sure all necessary equipment for dinner is turned on and ready to use.
- Follow prep lists to prepare necessary product for the evening's dinner service.
- Maintain proper handling of all food products, such as labeling, dating, rotation, temperatures, and storage of prepared or raw foods during and after service.
- Always follow ServSafe food handling, preparation, and workplace safety procedures.
- When dinner service is over, clean and sanitize all equipment that was used for service. (Stoves, ovens, tables, etc.)
- Follow closing check lists to ensure everything is done.
- Help dishwasher when necessary.
- During slower seasons when there is no dishwasher, their duties are the responsibilities of the cooks.
- Maintain good working relations with front of the house staff and other departments.
- Check pantry by Front Desk and prepare food items to meet par levels every day.
- Follow weekly cleaning schedule.
- Help keep walk-ins and storage room organized and clean.
- Keep breaks to a minimum and take them only when business levels allow.
- Cook employee dinners.
- When business is slow or there is more than one cook, look at banquet sheets and prep for the next banquet.
- Always read and be aware of the banquets that are posted for the week.
- Develop creative specials for restaurant.
- Maintain a professional appearance and attitude.
- Responsible for making sure all tasks are completed on the opening and closing checklists during each shift.
- Following menu to Executive Chef and Hilton Standard requirements.
- Employee required to be able to lift 45lbs following appropriate bending procedures (i.e. bend with knees). If an item is more than 45lbs, you are to seek assistance in lifting.
GUEST RELATIONS - Be ready available/approachable for all guests.
- Take proactive effort when dealing with guest concerns.
- Extend professionalism and courtesy to guests at all times.
OTHER REQUIREMENTS In addition to performance of the essential functions, this position may be required to perform a combination of supportive functions, determined by the supervisor:
- The hotel operates 7 days a week, 24 hours a day. Schedules must accommodate fluctuating business demands and associates, may be asked to work shifts other than those they prefer or normally work.
- Carry out all reasonable requests by leadership team.
- Comply with department uniform and appearance standards.
- Must be capable of how to read, write, and speak English fluently.
