1. Daily Opening Checklist

Unlock doors and secure premises

Turn on lights, equipment, and music (if applicable)

Check inventory levels for liquor, beer, wine, mixers, garnishes, and other supplies

Check fridge and bar temperature (ensuring everything is at safe temperatures)

Inspect the cleanliness of the bar area (wipe down surfaces, clean glasses, etc.)

Ensure cash register is stocked with change (till and float check)

Set up the bar station (arrange glassware, napkins, straws, and garnishes)

Check with staff for any special event details, customer requests, or orders

Review the schedule for the day

2. Customer Service

Review guest NPS and service scores in Akia. Print surveys, share with staff and

make available to all shifts.

Monitor customer satisfaction and ensure staff are engaging with customers properly

Handle complaints or special requests from customers

Ensure proper drink and food delivery to tables or customers at the bar

Observe and maintain crowd control if the bar is busy or crowded

Promote specials or new drinks to guests

3. Staff Management

Assign and communicate roles to the bartenders and other team members

Ensure staff uniform compliance

Conduct regular performance feedback for team members

Handle employee concerns

Ensure the team follows health and safety regulations

4. Inventory Management

Track inventory levels throughout the day

Perform and document weekly inventory

Update board for orders for replenishment of liquor, beer, wine, mixers, and bar

supplies

Inspect deliveries for accuracy and quality

Check expiry dates and rotate stock regularly to prevent waste

Perform stock audits and log the inventory

5. Financial Responsibilities

Montiner tabs and room charge transactions accurately charging guests and

handling disputes

Ensure accurate and timely transactions on the POS

Oversee the POS system for accuracy in orders, payments, and receipts

Review and prepare daily sales reports

6. Safety & Compliance

Ensure staff are following responsible alcohol service practices (checking IDs, not

overserving)

Inspect the premises for safety hazards

Ensure fire exits are clear and fire extinguishers are accessible

Maintain cleanliness and hygiene (including toilets, floors, and surfaces)

Adhere to health regulations (including cleanliness standards and temperature control)

Monitor customer behavior to prevent overconsumption and altercations

7. Event Planning

Work with coordinator on booked events and bar promotions

Ensure the bar is prepared for private parties or special events

Communicate any event-specific needs (e.g., special cocktails, menus, or staffing

requirements)

Ensure customer experience during events is top-notch

8. Closing Checklist

Close and secure all points of entry

Turn off lights, music, and equipment

Ensure all cash and receipts are counted and secured

Clean and sanitize all bar surfaces, glasses, and utensils

Empty trash and recycling bins

Check inventory levels and make notes of any items to reorder

Perform a final inspection of the premises for cleanliness and security

Complete closing reports for sales and inventory

Lock up the premises securely
