What you'll do: You'll directly supervise designated employees. Responsible for the management of food services, which includes the Inmate dining hall and special food services in compliance with Management & Training Corporation (MTC) and Texas Department of Criminal Justice (TDCJ) directives.
Essential Functions: - Ensures dining, service, and food preparation areas and equipment are maintained in a clean and sanitary manner; and ensures compliance with sanitation, safety, and health regulations.
- Provide staff training; evaluate staff performance and implement organizational and personnel changes as approved by the assistant warden and human resources.
- Inspects food for quantity, quality, and temperature; assures proper storage and use of inventory; and supervises the monitoring and logging of temperatures.
- Instructs employees and Inmates on safety rules and regulations, proper use of soaps and chemicals including Material Safety Data Sheets (MSDS), sanitary procedures, food preparation and portion control, and the operation of food service equipment.
- Advises food requirements and recipes; and calculates monthly, quarterly, semi-annual, and annual food requirements; prepares and approves requisitions for food items, supplies, and equipment.
- Prepares daily menus; ensures adequate controls are maintained over food preparation quantities and portion sizes; prepares menus for special diet requirements of Inmates; and reviews cooks' worksheets for accuracy.
- Oversee the department budget assuring the department operates efficiently and within budget; prepares budget reports and reconciles the budget monthly.
- Plans, assigns, and supervises the work of employees and Inmates; reviews employee and Inmate work schedules for adequate coverage; establishes and administers orientation and departmental in- service training programs for food service staff and Inmates.
- Perform security functions including "pat" and "strip" searches, by squatting and bending to perform such functions.
- Regular and predictable attendance is required.
- Promote the development of positive social skills through modeling appropriate behaviors and intervening when inappropriate behaviors are observed; provide regular feedback to staff regarding social skills procedures and intervention techniques.
- Maintain accountability of staff, Inmates and property; adhere to safety practices.
It is expected that the incumbent shall perform other duties as assigned within his/her capabilities as determined by management.
Education and Experience Requirements: - Graduation from an accredited senior high school or equivalent or GED.
- Three (3) years full-time, wage- earning experience in the supervision of employees or Inmates.
- Must possess seventy-two (72) consecutive months of satisfactory active service as a Correctional Officer, supervisor of Correctional Officers, Food Service Manager, or Laundry Manager.
- Must possess or be able to obtain current valid ServSafe Food Safety certification within twelve (12) months of employment date. Must maintain ServSafe Food Safety certification for continued employment in this position.
- Valid driver's license with an acceptable driving record required, unless waived by management.
