Purpose of Position

Reporting to the Director of Food & Beverage, the food and beverage manager, is responsible for ensuring the highest level of service while satisfying the guests' needs by creating/maintaining a successful F&B experience. In addition, the food and beverage manager is responsible for optimizing the financial performance and employee satisfaction while working with Hotel goals and objectives and maintaining active involvement with Lotte Hotel Seattle.

  • Education: University degree in Hotel/Restaurant management or related discipline strongly preferred.
  • Experience: Preferred minimum of 3 years' experience in food and beverage leadership role. Previous experience with mixology and wine programs preferred.
  • Ability to work behind the bar and make cocktails as needed.
  • Strong culinary and wine knowledge.
  • Sommelier qualification an asset.
  • Excellent organizational and computer skills.
  • Possess a gracious, friendly, and fun demeanor.
  • Ability to multitask, work in a fast-paced environment and have a high-level attention to detail.
  • Strong verbal and written communication skills in English.
  • Ability to work independently and to partner with others to promote an environment of teamwork.
  • Ability to analyze data and trends and create strategies for improvement.
  • Creative, effective leader and team player, possessing a high degree of professionalism, sound human resources management principles, communication, administrative skills and the ability to make sound and timely business decisions.

  • Ability to work a flexible schedule: weekends, holidays, AM, PM, overnight and overtime when needed.
Specific Job Knowledge, Skills and Abilities:
  • Must have fluent English skills to serve guests and make reports.
  • Must be a good communicator.
  • Must be able to train and make reports.
  • Must show basic computer proficiency such as with MS Word.
  • Must show understanding of F&B revenues and basic calculations.
  • Must show understanding of, and proficiency in, equipment and fixtures used in the operation of a restaurant.
  • Must be knowledgeable about applicable laws regarding the operation of hotels and restaurants.
Certificates, Licenses, Registrations:
  • Food handler card or local equivalent
  • Class 12/13 alcohol permit or local equivalent
Essential Functions:

50% Floor Management of Restaurant:
    • Oversee daily operations, ensuring service standards and assisting as needed.
    • Provide on-floor support including bartending, serving, wine service, and seating guests.
    • Lead the day-to-day operations of hotel outlets, ensuring high levels of service standards are followed.
    • Consistently offer professional, friendly, and engaging service, ensuring personalized guest experiences.
    • Drive innovative promotions, menus, and concepts to enhance guest experiences and profitability.
10% Inventory Management/Cost Controls:
    • Maintain correct inventory levels for operating supplies, uniforms, and beverages.
    • Support outlets in achieving financial and operational targets.
    • Implement effective control of food, beverage, labor, and operating expenses.
10% Scheduling/Time and Attendance:
    • Create and manage employee schedules, ensuring proper coverage.
    • Address timekeeping issues and attendance discrepancies.
10% Guest Services and Recovery:
    • Ensure outstanding guest service at all times, addressing inquiries and concerns.
    • Foster a welcoming environment, dedicated to creating lasting guest memories.
    • Lead initiatives for innovative promotions, menus, and service concepts to attract and retain guests.
10% Training and Service Standard Implementation:
    • Train and coach new and existing team members on service excellence and team development.
    • Provide coaching and feedback to enhance employee performance.
    • Ensure consistent adherence to Forbes standards and service procedures.
5% POS Maintenance and Reporting:
    • Ensure the functionality of POS systems, address technical issues, and generate operational reports.
    • Support reporting tasks essential for operational analysis and decision-making.
5% Safety and Sanitation:
    • Maintain cleanliness, organization, and adherence to health and safety regulations.
    • Supervise compliance with sanitation, fire prevention, and cleanliness standards.
    • Ensure team adherence to company policies and uniform standards.
Additional Notes:
  • Supportive Roles: Maintain interdepartmental communication, supervise standards for cleanliness, and address the availability of necessary resources.
  • Policies and Procedures: Protect guest and coworker privacy, maintain confidentiality, adhere to company policies, and uphold professional appearance standards.
  • Other Duties: Address tasks assigned by management and contribute to the preparation of strategic plans.

  • Perform other reasonable job duties as requested by Supervisors.
