Wally's Wine & Spirits is looking for a dynamic Director of Catering and Outreach to drive revenue and promote our luxury brand. Responsible for the development of catering and outreach including sales, systems, and staff to achieve maximum revenue potential and assure the highest level of customer satisfaction. Creation of annual sales and outreach plans. Cultivate ongoing catering & outreach sales through current key clients. Prospect and develop new leads and clients to add to an established book of business.
Key Responsibilities
- Develop sales including catering and events to achieve budgetary goals.
- Establish and maintain proper control systems to ensure that budgeted costs are met, and budgeted profit center income is achieved.
- Development of systems to allow for more effective use of sales staff time and improve communication.
- Direct supervision of Business Outreach Manager and administrative staff, including hiring, training, and annual performance evaluations.
- Create an annual sales plan outlining specific goals regarding solicitation, target groups and types of catering events.
- Identify and call on past and prospective clients directly to solicit bookings for catering and events functions.
- Development of clients through communication and building relationships to maximize each individual client's revenue potential, in both catering and events.
- Maintain all records of sales efforts, including weekly sales reporting outlining efforts and achievements.
- Conduct weekly meetings with the catering and onsite teams to review past events, upcoming events, operations, and sales efforts.
- Meet regularly with the Corporate Executive Chef to review the upcoming catering events and discuss the potential sales avenues that will contribute to the sales goals.
- Build relationships with various groups which have the potential of providing sales leads and referrals including the Los Angeles Convention and Visitors Bureau, local chambers of Commerce, Concierge association, etc.
- Collaborate with marketing to develop a social media campaign, promotional deck and or package/brochure to sell off-site catering events more effectively.
- Create and distribute weekly catering forecasts and calendars to keep all parties informed of current and prospective business.
- Oversee price negotiations with clients, contract development and payments, including reviewing and maintaining customer account receivable balances.
- Field all service-related complaints or issues regarding catering events. Take appropriate action to ensure client satisfaction.

- Complete understanding of catering menus & offerings as well as execution of catering events.
