DescriptionPOSITION SUMMARY JOB DESCRIPTION: Responsible for providing the highest quality food products for all guests and employees at the Leech Lake Deli
ESSENTIAL FUNCTIONS RESPONSIBILITIES:
- Creates a variety of main course, starch, vegetable, sauté and desert items independently or through menu and recipe interpretation.
- Demonstrates knowledge of all menu items, cooking procedures and handling of all food products.
- Responsible for following recipes, cooking times and temperatures according to the guidelines set by management.
- Consistently practice all procedures for food storage, rotation, spoilage, sanitation and the prevention of cross-contamination
- Delivers exceptional internal and external guest service standards.
- Learns and understands menu and food preparation.
- Meets or exceeds kitchen sanitation standards
- Trains new employees in food preparation, food storage, sanitation and the prevention of cross-contamination.
- Cleans and maintains all equipment used in the deli.
- Maintains knowledge of all events in the property as a whole.
- Attends and/or facilitates all mandatory meetings and training.
- Maintains confidentiality at all times.
- Is sensitive to Native American Culture.
- Operates within the parameters of the Leech Lake Gaming Human Resource Policy, Departmental Policy Manual and all Tribal Internal Controls (TICs), and all other applicable regulations.
- Secures the assets of Leech Lake Gaming and the Leech Lake Band of Ojibwe.
- Performs other duties as assigned.
Position RequirementsKNOWLEDGE, SKILLS, AND ABILITIES: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.
POSITION REQUIREMENTS: - Possess knowledge of food quality standards and understanding of service and atmosphere as they relate to the line cook position.
- Ability to work independently.
- Must be dependable and reliable.
- Working knowledge of food service equipment and utensils.
- Knowledge of federal and state sanitation guidelines.
PHYSICAL REQUIREMENTS: - Physically capable of remaining on feet for long periods of time.
- Subject to internal working conditions.
- Must be able to lift up to 50 lbs.
EDUCATION AND SKILLS Education Required: High School Diploma or General Education Equivalency (GED), ServSafe Certification.
Education Preferred: Culinary coursework
Experience: Minimum of two years of quantity buffet cooking or full service dining experience required.
Computer Skills: Minimal computer skills required
Certificates & Licenses: Must meet Tribal/State compact licensing requirements, pass criminal background check and submit to drug testing.
