A highly respected, nationally recognized restaurant group is seeking an experienced Commissary Manager to lead operations at their state-of-the-art commissary kitchen in Los Angeles. This is a critical leadership role responsible for overseeing production, ensuring food safety and quality standards, optimizing systems, and developing a strong team to support the growth of this delivery-first restaurant brand.
Key Responsibilities:
- Manage day-to-day commissary kitchen operations, ensuring timely, efficient, and high-quality food production and distribution.
- Implement scalable systems to streamline operations, minimize waste, and maximize productivity.
- Ensure compliance with HACCP and health department regulations; lead food safety training for staff.
- Oversee inventory management and procurement, maintaining cost efficiency and stock accuracy.
- Partner with culinary and R&D teams to ensure recipe consistency and quality control.
- Build and mentor a high-performing team with a focus on accountability, safety, and growth.
Requirements:
- 5+ years of experience managing a commissary, food production facility, or large-scale kitchen.
- Strong knowledge of food safety practices and HACCP compliance.
- Demonstrated ability to build systems and processes to support growth and operational scaling.
- Experience managing procurement, scheduling, and inventory software.
- Effective team leadership, communication, and problem-solving skills.
