PURPOSE AND PERFORMANCE GOALS: All employees shall strive to provide exceptional hospitality to both internal and external guests at all times. This associate will be responsible for exemplifying the Maverick Hotel and Restaurants Culture as well as providing promotional expertise for the location as both a destination and a harmonious work environment.
SUMMARY: The Bartender is responsible for service of all restaurant and private event beverage operations per location. This associate prepares and serves alcoholic and non-alcoholic beverages to guests, courteously, and efficiently according to Maverick Hotel and Restaurants specifications. This associate maintains stock, supplies and cleans the restaurant and private event bar(s) and equipment each shift. This associate must have weekend availability. This associate will assist in maintaining the Maverick Hotel and Restaurant standards.
ESSENTIAL DUTIES AND RESPONSIBILITIES: includes the following. Other duties may be assigned.
• Maintain complete knowledge of and comply with all departmental policies/service procedures/standards
• Maintain complete knowledge of correct maintenance and use of equipment. Use equipment only as intended
• Anticipate guests' needs, respond promptly and acknowledge all guests, however busy and whatever time of day
• Maintain positive guest relations at all times
• Be familiar with all Maverick Hotel and Restaurant services/features and local attractions/activities to respond to guest inquiries accurately
• Resolve guest complaints, ensuring guest satisfaction and reputation management
• Monitor and maintain cleanliness, sanitation and organization of assigned work areas
• Maintain complete knowledge of service requirements for assigned function:
• Liquor brands, beers and non-alcoholic beverages ordered
• Particular characteristics/description of wines, sparkling wines, & cocktails ordered
• Prices for specified bar selections
• Designated glassware, ingredients, preparation method and garnishes required
• Group name, type of function and expected attendance for daily events
• Special requests/arrangements
• Location of other nearby Maverick Hotel and Restaurant operations
• Order of service sequence
• VIP and frequent personnel
JOB TITLE: Bartender WAGE RANGE: Hourly
DEPARTMENT: Food and Beverage REPORTS TO: Manager on Duty
• Maintain complete knowledge of and strictly abide by state liquor regulations, particularly those prohibiting alcohol service to minors, intoxicated persons and drunk driving.
• Maintain complete knowledge of P.O.S. and operating systems.
• Obtain assigned bank and ensure accuracy of the initial amount provided. Keep bank secure and locked at all times
• Complete opening side duties:
Check quality and set up of designated bar stock and supplies by using opening checklist
• Requisition of all necessary supplies
• Transport supplies from storeroom(s) to bar set-up area
• Stock ice
• Prepare garnishes
• Stock glassware, plateware, flatware, all applicable paper supplies, clean menus, and clean check presenters
• Prepare mixes and batches
• Check cleanliness and condition of bar unit (C02 lines, beer and batch lines, soda tanks, soda guns, drains, faucets and sinks, etc.)
• Check condition and cleanliness of blender, shaker and other tools and units.
• Check temperature of refrigeration and freezer units
• Transport bar unit with all supplies and equipment to assigned function area and set up in specified location. Ensure security of all bar supplies in function area
• Greet guests and execute guest orders and requests, utilizing suggestive/up-selling techniques
• Input orders into system; legibly document orders when system is down
• Ensure that all cash bar drink orders from Servers are accurately entered into the P.O.S. system or collect drink tickets before giving drinks to them.
• Prepare all drink orders and requests for guests according to specified recipes
• Serve drink and food orders and requests to guests, promptly
• Issue, open and serve wine, sparkling wine, and liquor bottles; collect payment and/or tickets where/when specified
• Prepare and serve cappuccino and espresso and coffee and tea where/when applicable
• Remove soiled wares from bar top and tables and place in designated area
• Anticipate and communicate replenishment needs promptly, ensuring no shortages throughout scheduled function time. Ensure proper authorization for additional payments as required prior to replenishing
• Clearly communicate last call at designated closing time to guests and fellow Maverick employees
• When assigned, transport mobile bar unit with all supplies and equipment from function area to designated storage area and breakdown the bar and return all supplies to designated areas
• Prepare consumption report promptly according to specified procedures
• Present clean guest check and process payment. Adhere to all cash handling and credit policies/procedures
• Collect and report tips at the end of assigned shift upon shift check out
• Legibly complete bottle transfer slips and distribute accurately
• Ensure maximum usage of all supplies to exceed budgeted beverage cost and to prevent waste
• Use all chemicals in accordance with OSHA regulations and Maverick Hotel and Restaurant requirements
• Complete closing side duties:
• Properly store all reusable goods in designated areas
• Empty and drain ice bins; clean sink
• Wipe and clean all surfaces of bar; clean all bar equipment and tools
• Wipe down all bottles and surfaces
• Secure all liquor, beer, wine, bar coolers, bar cabinets and alcohol storage areas
• Remove trash from bar(s) area

EXPERIENCE & EDUCATION:
• At least one year customer service experience required
• At least six months food & beverage experience required
• Prior experience as a Bartender or Barback.
• Banquet and/or private events and catering experience preferred
• High school diploma or equivalent

• Must be 21 years of age to serve alcoholic beverages

• Must possess valid BASSET certification or local state regulation
• Must possess valid Food Handler's card

• Must be knowledgeable and familiar with food and beverage industry
• Must have a passion for creating an exceptional experience for all guests and patrons
• Knowledge of both industry standard drink recipes and Maverick Hotel and restaurant recipes

HOURS
Due to the seasonal nature of the hospitality industry, and the fact that Maverick Hotels and Restaurants provides guest services 24 hours a day, 7 days a week, an employee may be required to work rotating shifts including evenings, weekends, holidays and/or overtime.
