Job Summary:

The Cook in the Banquet Kitchen is responsible for preparing a variety of high-quality dishes for banquets, receptions, off-site catering events, and a busy café. Working under the supervision of the Banquet Chef and Chef de Partie, the Cook will assist in the preparation of hot savory foods, cold garde manger items, canapés, desserts, and café supplies like salads, wraps, and pastries. This role requires attention to detail, efficiency, and adherence to culinary standards to ensure that food is prepared and presented to the highest quality.

Key Responsibilities:
  • Food Preparation and Cooking:
  • Prepare and cook a wide range of menu items, including hot entrees, cold dishes, appetizers, canapés, and desserts according to banquet and café menus.
  • Assist in preparing items for off-site catering events, ensuring food is well-cooked and ready for transportation.
  • Follow recipes and presentation guidelines to ensure consistency in taste and appearance.
  • Handle special dietary requests and modify recipes as necessary under the guidance of the Banquet Chef and Chef de Partie.
  • Station Setup and Cleanliness:
  • Set up and organize assigned stations with all necessary supplies and ingredients, ensuring readiness for service.
  • Maintain a clean, organized, and safe work area during food preparation and service.
  • Clean and sanitize equipment, utensils, and surfaces throughout the shift, following food safety standards.
  • Support for Banquet and Catering Operations:
  • Work efficiently to meet the demands of large banquet events, off-site catering, and café orders.
  • Ensure timely production and plating of dishes to meet service schedules for events and café needs.
  • Assist with the setup and breakdown of banquet and catering stations, organizing and replenishing supplies as needed.
  • Inventory and Quality Control:
  • Monitor stock levels of ingredients and supplies, notifying the Chef de Partie or Banquet Chef of any shortages.
  • Check ingredients for freshness, quality, and proper storage to minimize waste and uphold food safety standards.
  • Assist in labeling, dating, and rotating ingredients to ensure freshness and reduce food waste.
  • Collaboration and Communication:
  • Communicate effectively with the Banquet Chef, Chef de Partie, and other kitchen staff to coordinate preparation and service.
  • Work as part of a team, providing assistance to fellow cooks and maintaining a positive, collaborative environment.
  • Adapt to changing demands and special requests during events, maintaining flexibility and efficiency.
Qualifications:
  • Previous experience as a cook in a high-volume kitchen, banquet, or catering environment is preferred.
  • Knowledge of culinary techniques for hot and cold food preparation, including basic baking and pastry skills.
  • Understanding of food safety, sanitation, and hygiene standards, with an emphasis on HACCP guidelines.
  • Ability to work in a fast-paced environment, handling multiple tasks while maintaining attention to detail.
Skills:
  • Strong organizational and time-management skills.
  • Ability to follow recipes and presentation guidelines accurately.
  • Good communication skills for effective teamwork.
  • Adaptability and flexibility in responding to the demands of banquet and catering events.
Physical Requirements:
  • Ability to stand for extended periods, lift up to 50 pounds, and work in a high-paced kitchen environment.

Flexible schedule required, including availability on evenings, weekends, and holidays based on banquet and catering demands.
