Job Overview: The Banquet Chef plays a vital role in our kitchen. they have a large amount of responsibility. Essentially, the Banquet Chef is responsible for planning and directing food preparation in our events. This involves a large degree of supervising other kitchen staff, as well as keeping an eye out for problems that arise in the kitchen and taking initiative to problem solve. The Banquet Chef may also need to effectively train, and provide guidance and discipline.
Role and Responsibilities
Financial Returns: - Control food usage to minimize waste. Mathematical skills, including basic math, percentages, quantities, and variances are used frequently
- Advise supervisor of low inventory items; assist in receiving items and taking inventory as required
- Ensures a first-in, first-out rotation system and verifies all food products are properly dated and organized for quality assurance.
- Manages food and product ordering by keeping detailed records and minimizes waste, plus works with existing systems to improve waste reduction and manage budgetary concerns
People: - Work with the kitchen team and DOS to produce diversified menus in accordance with the Hilton Garden Grill and Event Menus
- Work as a team and communicate and coordinate with other departments to ensure excellent quality and service
- Establish the working schedule and organize the work in the kitchen
- Produce quality dishes that follow up the established menu and recommend menus, as well executing or exceed the client's requirements.
- Support overall training of the kitchen team to reach the quality of food and presentation
- Train the auxiliary kitchen staff to too provide the best results in minimum time and using the maximum the available resources
- Guides kitchen staff members, including, but not limited to line cooking, food preparation, and dish plating
- Maintain sanitation and cleanliness standards in the kitchen area that meet or exceed any local laws regarding health and safety
- Maintain a clean, neat, and well-organized work area, including but not limited to reach-ins, walk-ins, and counters
- Remain current in all updates about new procedures and training.
- Follow directions thoroughly

- Satisfactorily communicate with guests, management, and co-workers to their understanding
- Perform department/outlet opening or closing duties as required
Guest Experience: - May occasionally interact directly with guests
- Prepare and cook orders in accordance with portion and quality standards specified in recipes
- Use of creativity and the ability to create new dishes that appeal to our banquet guests.
- Create tasting menus for clients interested in contracting the food for different events (weddings, banquets, corporate dinners, birthday parties, etc.) from their kitchen
- Anticipate and address guests' service needs
- Maintain confidentiality of guest information and pertinent hotel data
Responsible Business: - Work with the kitchen team and Director of Sales to produce diversified menus in accordance with the Hilton Garden Grill and Event Menus
- Ability to comply with local laws regarding food handling or serving of alcohol
- Maintain sanitation and cleanliness standards in the kitchen area that meet or exceed any local laws regarding health and safety
- Follow all established safety protocols and procedures at all times. Immediately report any unsafe or malfunctioning equipment or any safety incident to the supervisor or manager on duty
- Verifies that food storage units all meet standards and are consistently well-managed
- Maintain a professional and high-quality, service-oriented environment at all times
- Uniform and personal appearance are kept clean and professional and are in accordance with the company grooming Policy. A smile is considered part of the uniform
- Comply with company policies, procedures, and the Code of Ethics
- Learn and adhere to all fire and emergency procedures, including procedures for the handling of the fire panel, ensuring guest safety, and participating in an evacuation if necessary
- Practice safe working habits, including bending and lifting appropriately to avoid injury, reporting hazards, appropriate set of cleaning chemicals, and working to minimize tripping and falling hazards
- Prioritize and organize
- Be a clear thinker, remaining calm and resolving problems using good judgment
- Participate in helping the hotel recycle

Preferred Qualities:
- Proficient in English
- 3+ years of experience as a Sous Chef
- Understanding of various cooking methods, ingredients, equipment, and procedures
- Excellent record of kitchen and staff management
- Accuracy and speed in handling emergencies and providing solutions
- Familiar with the industry's best practices
- Working knowledge of various computer software programs
- BS degree in Culinary science or a related certificate is a plus
- Mathematical skills, including basic math, percentages, quantities, and variances are used frequently.
