SUMMARY Operate Sollich area processing equipment (including but not limited to OKA extruder, OKA enrober, SOLLICH extruder, SOLLICH enrober, SOLLICH auto-pack, oyster equipment, and various delivery equipment) in accordance with equipment and product SOPs. Adjusts and regulates various pieces of machinery to comply with quality standards. ESSENTIAL DUTIES AND RESPONSIBILITIES INCLUDE THE FOLLOWING. OTHER DUTIES MAY BE ASSIGNED Set up, adjust and operate the full range of extruders, chocolate tempering, enrobing and bottoming equipment: as well as stringer decorator, truffle feeder device, pumps and nut powder spreaders. Perform all necessary temper tests in accordance with SOPs Time all equipment in accordance to production standards and SOPs, and monitor continuous production. Feed creams and products into extrusion equipment Monitor belt tracking and equipment alignment. Monitor availability of ingredients to meet scheduling demands Monitor cream temperature and adjust timing to meet SOPs and production standards Responsible for keeping the piece weight in "spec" and make adjustments according to standards Inform other production operators of production information, and give guidance to fellow workers Distribute nuts and powder to enrobing room spreader device and to employees placing nuts and rolling truffles Document various settings, temperatures and speeds on a daily checklist. Inspect weigh & record average weights in accordance to SOPs and drive line performance to operate at minimal loss and x-pack Stop production at any time if problems arise and call leader or supervisor. Ensure that all returned ingredients are in clean sanitary condition ADDITIONAL DUTIES Follow all standard operating procedures (SOPs) Monitor and pump chocolate by the use of a PLC unit in the enrobing room Record all downtime, amount of ingredients and lot numbers used for daily production. Perform or assist in changeovers including but not limited to enrober and mini temper chocolate changes Check cocoa butter tank and add cocoa butter as instructed by supervisor or leader, recording the quantity and lot numbers Train new employees as required Comply with all safety policies, report safety violations, and attend team and safety meetings Report problems regarding food safety to supervisor or manager. Perform end of shift duties including but not limited to extruder heat procedures, perform assembly or disassembly as required or sanitation work if necessary. Required to work until end of production shift daily Responsible for equipment and area inspections, to ensure all equipment is in proper operating condition and stored properly. Minor maintenance and preventative maintenance tasks may be required. Required to spend minimum operating time on each piece of Sollich equipment as determined by equipment qualification schedule.
