Role Summary

Position responsible for monitoring and supervising the day-to-day food and beverage operations in the restaurants and bars. Overseeing guest and associate satisfaction, maintaining standards and meeting or exceeding targets, and demonstrating knowledge and proficiency of all applicable food and beverage laws and regulations.

REPORTS TO: Executive Director of Food and Beverage and Culinary

General Duties and Responsibilities

  • Manages all day-to-day floor operations. Understands manager's positions well enough to perform duties in associates' absence. Utilizes interpersonal and communication skills to lead, influence, and encourage others; demonstrates honesty/integrity; leads by example.
  • Oversees all floor operations in the bars, restaurants, and any other F&B operation as assigned.
  • Drive efforts and activities in all outlets to achieve and exceed the revenue targets.
  • Implement strategies to increase the food and beverage sales.
  • Oversees the implementation of all programming per outlet.
  • Oversees and works closely with the Training Manager to implement training plans per outlet to drive excellent customer service to all guests.
  • Responds quickly and provides proactive support to all outlets managers.
  • Provides a learning atmosphere with a focus on continuous improvement.
  • Provides proactive coaching and counseling to associates.
  • Increase and maintain the productivity level of all associates in all outlets.
  • Develops specific goals per outlet and plans to prioritize, organize, and accomplish revenue and quality targets.
  • Sets clear expectations with the associates and team leaders and ensures that appropriate rewards are given when expectations are exceeded.
  • Ensuring Exceptional Customer Service.
  • Responds quickly and proactively to guest's concerns.
  • Understands the brand's service culture and standards.
  • Ensures that all employees, team leaders and managers understand the brand's service culture.
  • Takes ownership of a guest complaint/problem until it is resolved or it has been addressed by the appropriate manager or associate.
  • Provides services that are above and beyond for customer satisfaction and expectations. Improves service by communicating and assisting individuals to understand guest needs, providing guidance, feedback, and individual coaching when needed.
  • Serves as a role model to demonstrate appropriate behaviors.
  • Provides guidance and direction to subordinates, including setting performance standards and monitoring performance on the floor.
  • Identifies the developmental needs of others and train, coaches, mentors, or otherwise helps others to improve their knowledge or identifies the educational needs of others, develops formal educational or training programs or classes, and teaches or instructs others.
  • Develops an action plan to attack need areas and expand on strengths based on the outlet's manager engagement and guest satisfaction results.

Experience and Requirements

  • 3+ years direct related experience as a Food & Beverage Director in a luxury hotel setting -knowledge of Forbes Service Standards is required.
  • Must have sound and detailed knowledge of all F&B outlet operations (IRD, Banquets, Fine Dining Restaurant, All Day Dining, Lounge, Culinary, Stewarding, etc.).
  • HAACP & ServSafe certifications required. Must be able to obtain all applicable D.C. food and beverage handler's certifications.
  • Must be fluent in English with excellent communication and presentation skills.
  • Must possess superior computer proficiency to include various property management systems, MICROS, Open Table, MS Office, HotSOS, etc.
  • Must have be a superior organizational skills and strong multi-tasking abilities.
  • Must be able to work a flexible schedule that will include early mornings, late nights, weekends and holidays.
  • Must be physically able to meet the demands of the position including: standing/walking for extended periods of time while working; lift/carry/push/pull (+/-) 25 lbs.
